A revitalizing drink combining lime juice, cucumber, and mint to keep you hydrated.
Ingredients

- 1 cup (from about 8 medium limes) - Fresh lime juice
- 1 Tbsp. plus 2 tsp. - Granulated sugar
- ½ tsp. or ¼ tsp. Morton kosher salt - Diamond Crystal kosher salt
- 1 large (about 11 oz.) - English hothouse cucumber
- 1 cup; plus additional sprigs for garnish (optional) - Coarsely chopped mint

- 3¼ cups - Water
- Step 1 In a medium bowl, dissolve 1 cup fresh lime juice, 1 Tbsp. plus 2 tsp. sugar, ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt, and 3¼ cups water by stirring well.
- Step 2 Divide 1 large English hothouse cucumber into four equal sections. Reserve one section. Pile 1 cup coarsely chopped mint atop the other cucumber pieces and use a rolling pin to crush them until the mint is wilted and the cucumber is in large chunks. (Alternatively, this can be done using your hands in a large bowl.) Add this mixture to the lime juice blend and allow to sit for 10 minutes.
- Step 3 Filter the beverage into a large pitcher, pressing down on the mint and cucumber mix to release all juices, then discard the solids. Slice the remaining cucumber portion into thin rounds. Serve the beverage over ice in glasses, garnished with cucumber slices and mint sprigs if desired. Alternatively, pour the mixture into a water bottle for portability, without garnishes.
- Step 4 Advance Preparation: This beverage (excluding cucumber slices and mint sprigs) can be prepared one day prior. Store covered in the refrigerator.
