Whip up a smooth and velvety hummus using canned chickpeas for an effortlessly delicious dip.
Main Ingredients
- 2 (15-oz.) cans - Canned chickpeas
- 2 - Garlic cloves, smashed and peeled
- 6 Tbsp. - Fresh lemon juice
- 6 Tbsp. - Tahini
- 1½ tsp. or 1 tsp. - Diamond Crystal or Morton kosher salt
- ¼ cup, plus more for serving - Extra-virgin olive oil
- Step 1 Pour the contents of 2 (15-oz.) cans of chickpeas into a medium pot. Cover with cold water, ensuring there’s an extra inch of water above the chickpeas. Bring the mixture to a boil over high heat, lower the heat to medium-low, and let it simmer until the chickpeas start to break down, roughly 20 minutes. Save 1 cup of the cooking liquid before draining the chickpeas.
- Step 2 Place the drained chickpeas into a food processor. Add the smashed and peeled garlic cloves, fresh lemon juice, tahini, kosher salt, and 2 tablespoons of the reserved cooking liquid. Blend the mixture continuously for 5 minutes until it reaches a smooth and creamy consistency. If needed, add more cooking liquid, one tablespoon at a time, if the mixture looks dry or becomes too thick.
- Step 3 While the food processor is running, slowly pour in ¼ cup of extra-virgin olive oil. Blend until everything is well combined. Scoop the hummus into a serving dish and drizzle extra olive oil on top for garnish.
