A fun twist on classic pizza using Cheesy Noodles!
Essential Elements
- 8 oz. - No Yolks® Extra Broad Noodles
- 2 tbsp. - extra-virgin olive oil
- 1 - green bell pepper, chopped, some reserved for topping
- 1/2 pt. (4-oz.) - sliced cremini mushrooms, some reserved for topping
- 2 cloves - garlic, thinly sliced
- 1/3 cup - pepperoni, some reserved for topping
- 1 cup - marinara (or pizza sauce)
- to taste - kosher salt
- to taste - Freshly ground black pepper
- 1/4 tsp. - crushed red pepper
- 2 cups - shredded mozzarella, divided
- 1/2 cup - parmesan, grated
- 6 - large egg whites, beaten (or 3 large eggs)
- Step 1 Boil the No Yolks Extra Broad Noodles as per the instructions on the package. Once done, drain them thoroughly and toss them back into the pot.
- Step 2 Heat the olive oil in a large skillet over medium heat. Toss in the chopped bell pepper, sliced mushrooms, and garlic. Sauté until the vegetables soften and the kitchen smells amazing!
- Step 3 Add the pepperoni pieces to the skillet and let them get a little crispy. Save some pepperoni for later.
- Step 4 Stir in the marinara (or pizza sauce), a pinch of salt, a dash of freshly ground black pepper, and the crushed red pepper flakes. Let the mixture simmer slowly.
- Step 5 Combine the cooked No Yolks noodles with the sauce mixture in the skillet. Make sure everything is well mixed and nicely coated.
- Step 6 Spread half of the shredded mozzarella uniformly over the bottom of a baking dish. Pour the noodle and sauce combination on top and spread it evenly. Drizzle the beaten egg whites (or eggs) over the noodles. Sprinkle the remaining mozzarella and grated parmesan on top.
- Step 7 Preheat your oven to 375°F (190°C).
- Step 8 Transfer the baking dish to the preheated oven and bake for approximately 40 minutes, or until the cheese is melted and bubbly with a beautiful golden hue.
- Step 9 Take out your Cheesy Noodle Delight Pizza, sprinkle the reserved bell peppers, mushrooms, and pepperoni on top for an added layer of flavor and a pop of color. Let it cool for a few minutes, then slice and serve.
